Overview
All preparatory work and cooking are hands-on experiences, performed by our students. Our courses (including for Vegetarian) start with a visit to Payangan Traditional morning market, accompanied by the chef taking advantage of cooler outdoor temperatures for shopping, preparing and cooking. We learn about Balinese tastes and customs, local meats, fish, and other products; finding ingredients and unique ways of bargaining in the Balinese style. Touring a traditional outdoor market provides an insight into how Balinese people spend their time before cooking. Upon arriving at the compound house we introduce some well grown herbs and spices from our extensive gardens. Students are taught to process food using traditional utensils and techniques. Paste & sauce preparation is one of the most interesting & important aspects of Balinese cooking - with two types of spice preparation: chopped on wooden chopping blocks or ground in stone mortars before being cooked in a variety of ways to form Balinese dishes.
